Quinoa originated in the Andean region of South America and was domesticated three to four thousand years ago for human consumption in the Titicaca Lake in Peru and Bolivia.

Quinoa – I made this salad with 11 other healthy and nutritious ingredients. This salad is also known as super food salad. Quinoa is an edible seed that is one of the world’s most popular health food. It is gluten-free, high in protein and contains many important nutrients -amino acids, high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants such as flavonoids. Quinoa is very high in minerals. Soaking or sprouting the quinoa helps the absorbance of these minerals in the body. A study has shown that quinoa reduces blood sugar levels, improve metabolic health and weight loss.

Ingredients

200g any quinoa(white/red/mix)

400ml cold water

4 tablespoons olive oil

2 tablespoons lemon juice

½ punnet cherry tomato

1 pcs peeled and seeded avocado

50g blueberry

50g pumpkin seeds

50g crushed walnut

50g black olive

½ bunch small rocket

1 handful baby spinach

Salt and ground black pepper, to taste

Method

 Rinse the quinoa in water and drain it well. Add to a saucepan with 400ml cold water.

Bring quinoa to the boil. Reduce the heat and simmer gently for 10-15 minutes.

Drain any excess liquid from the quinoa well. Add olive oil and mix it..

Transfer quinoa into a big salad bowl and keep aside to cool.

Cut the cherry tomato in half, dice the avocado and add to quinoa.

Combine the rest of the ingredients- blueberry, rocket, spinach, pumpkin seed, walnut, olive, lemon juice, salt and pepper into the quinoa mix.

Mix the salad well, check seasoning.

Our power pack quinoa salad is ready to eat.

 Note:-This salad can prepare with less ingredients doesn’t have to be 11 ingredients.
